I'll start putiting my favorites dishes up here.

Carne Asada Pot Roast

This is my best attempt to duplicate a Tri-Tip Sirloin from Trader Joe's refered to as Carne Asada. It's a slow cooked, tangy roast that has a fantastic aroma. I've served it baked sweet potatoes and steamed collard greens.

  • Tri- Tip Sirloin Roast (Trimmed and about 3" at thickest section - I think Trader Joe's had the best locally)
  • 2 sweet onions, chopped, or 1/2 cup dried onion bits (like from Costco)
  • 5 Garlic Cloves or 1/4 cup of dried garlic bits (like from Costco)
  • 1/3 cup Ground Cumin (I've used bulk-section Cumin from WinCo)
  • 1/4 cup Key Lime Juice (I've used "Nellies")
  • 1/4 cup Olive Oil (I've used kalamata olive oil from Trader Joe's)
  • Juice of a squeezed lemon
  • 3 Tbsp Salt (I've been using Sea Salt from Trader Joe's)
  • 1 tsp Cayenne Pepper
  • Three cups of water

Here's some other ingredients I've wanted to try out but haven't had a chance to (if you try any of these, let me know how it turns out?):

  • Fresh green chilies
  • Paprika
  • Orange powder

Combine in a crockpot and cook for 4-6 hours on low.
Before putting the meat in, I taste the liquid and adjust ingredients for my mood.
I cook it until it cuts with a fork.
